Raspberry Tuile Recipe

Raspberry Tuile Recipe

Ingredients:

• 200g raspberry purée

• 40g glucose

• 125g butter (room temperature)

• 120g flour

• 80g powdered sugar

• 120g egg whites

• Pinch of salt

Instructions:

1. Preheat the oven
Preheat the oven to 150°C (300°F). The right temperature ensures the perfect texture for crispy tuiles.

2. Heat the raspberry mixture
Heat the raspberry purée with glucose until the glucose is fully dissolved. This step enhances the fruit flavor and ensures a smooth consistency.

3. Mix the batter
In a mixing jug, combine the raspberry mixture with butter, flour, powdered sugar, egg whites, and salt. Use a hand blender to mix everything into a smooth batter. Achieving a homogeneous texture is essential for delicate tuile recipes.

4. Fill the silicone mold
Lightly spray your silicone tuile mold with baking spray if needed. Fill the molds evenly to achieve consistent, professional results.

5. Bake the tuiles
Bake for 6 to 7 minutes. Be careful not to overbake, as this can cause the tuiles to lose their vibrant color.

These raspberry tuiles add an elegant, fruity accent to desserts and fine dining presentations. Their vibrant color and subtle crunch make them ideal for garnishing plated desserts, enhancing pastry creations, and elevating gourmet plating techniques.
